At the top of De Zalmhaven, Rotterdam's iconic new tower and the highest in the Benelux, we'll be opening our 5th location at the end of 2024!
We are proud to be able to operate this incomparable location, situated in the heart of the city and offering a 360° view of the superb city of Rotterdam.

Our mission: to create a premium restaurant & cocktailbar offering and an unforgettable visitor experience on the top floors of the building. The project will enhance the city's local culture and contribute to Rotterdam's worldwide reputation as a top tourist destination.

About the job

This is your opportunity to set-up a brand new kitchen at the most extraordinary and unique location in the country. As our Head Chef, you will be responsible for overseeing all aspects of the kitchen operations, including menu planning, food preparation, inventory management, and kitchen staff supervision. You will work closely with the management team to develop creative and seasonal menus that meet the highest standards of quality and presentation. Additionally, you will ensure compliance with health and safety regulations, maintain kitchen cleanliness, and uphold food quality standards at all times.

Responsibilities:

  • Develop and execute innovative menus that reflect current culinary trends and seasonal ingredients.

  • Supervise kitchen staff, including chefs, cooks, and kitchen assistants, and provide guidance and training as needed.

  • Oversee food preparation, ensuring consistency, quality, and adherence to recipes and portion sizes.

  • Manage inventory levels and order supplies to maintain adequate stock levels while minimizing waste.

  • Monitor kitchen equipment and ensure proper maintenance and sanitation procedures are followed.

  • Uphold food safety and sanitation standards, including HACCP guidelines, and ensure compliance with health department regulations.

  • Collaborate with the management team to develop cost-effective strategies for menu pricing and profitability.

  • Stay informed about industry trends and best practices and incorporate new techniques and ingredients into menu development.

Requirements:

  • Proven experience as a Head Chef or Executive Chef in a premium high-volume restaurant or hospitality setting.

  • Culinary degree or equivalent certification from a recognized culinary institution.

  • In possession of SVH diploma.

  • In possession of an apprentice master diploma (leermeester).

  • Knowledge of hygiene regulations (HACCP).

  • Extensive knowledge of culinary techniques, flavor profiles, and international cuisines.

  • Strong leadership and communication skills with the ability to motivate and inspire kitchen staff.

  • Excellent organizational and time management abilities, with a keen attention to detail.

  • Ability to work effectively under pressure in a fast-paced environment.

  • Flexibility to work evenings, weekends, and holidays as needed.
